The Product Application:
1. This strain changes the disaccharide bond of sucrose from (1→2) to (1→6), and also changes the non-reducing disaccharide (sucrose) to reducing disaccharide (isomerose sucrose), which is about 52% of glucose. Not easy to produce Browning reaction.
2. The sweetness of this product is about half of sucrose, suitable for low-sweetness candy, pastry and so on.
3. For baked goods, sucrose can be replaced at a ratio of 1:1, generally without changing the traditional formula. If the Browning is too light, increase the baking temperature or add a small amount of fructose.
